Five Easy Back To School Microwave Recipes!

Going to college? No kitchen nearby? No crockpot on hand? That’s ok! Let your microwave do the hard work for you! Here are five simple, fun, and time saving back to school microwave recipe hacks that anyone can whip up.

Muffins in a Mug

  • 1 egg
  • 2 tablespoons golden flax meal
  • 2 tablespoons almond flour
  • 2-4 teaspoons of Stevia (Truvia or Gentle Sweet)
  • ½ teaspoon aluminum free baking powder
  • 1 flat tablespoons coconut oil
  • ¼ cup blueberries (fresh or frozen)
  • butter (optional)
  1. Crack 1 egg into a coffee cup and whisk it well with a fork.
  2. Add 2 tablespoons  golden flax meal.
  3. Add 2 tablespoons  almond flour.
  4. Add 2-4 teaspoons of Stevia (Truvia or Gentle Sweet)
  5. Add ½ teaspoon aluminum free baking powder
  6. Add 1 flat tablespoon coconut oil
  7. Stir vigorously with a fork until mixed together.
  8. Fold in ¼ cup blueberries.
  9. Microwave on high for 1 minute.
  10. Serve!

Single Serve Meatloaf

  • 2 tablespoons 2% milk
  • 1 tablespoon ketchup
  • 2 tablespoons quick-cooking oats
  • 1 teaspoon onion soup mix
  • 1/4 pound lean ground beef
  • Additional ketchup, optional


  1. In a small bowl, combine the milk, ketchup, oats and soup mix.
  2. Crumble beef over mixture and mix well.
  3. Pat into a microwave-safe mug or custard cup coated with cooking spray.
  4. Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain.
  5. Let stand for 3 minutes.
  6. Serve with additional ketchup if desired.

Strawberry Breakfast Bowl

  • 1/4 cup oat bran
  • 2 tablespoons oat flour
  • 2 tablespoons buckwheat groats
  • 1 tablespoon ground flaxseed
  • 1/2 teaspoon baking powder
  • pinch salt
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 2 tablespoons unsweetened applesauce
  • 1/4 cup almond milk
  • 1/2 cup fresh strawberries, diced


  1. Mix together the oat bran, oat flour, buckwheat groats, flaxseed, baking powder, salt, and cinnamon.
  2. Stir in the vanilla, applesauce, and almond milk until all the dry ingredients are incorporated.
  3. Gently fold in the diced strawberries.
  4. Spray a microwave safe baking dish or ramekin, and pour batter into dish.
  5. Heat for 1 minute and 30 seconds, or until the top is set.
  6. Let cool for 2-3 minutes.
  7. Serve.


  • 2 flour tortillas (small size)
  • handful of pepperoni
  • 1-1.5 cups shredded cheese, Italian blend
  • ½ cup shredded Parmesan cheese
  • ½ cup pizza or spaghetti sauce


  1. Microwave 5 or so pepperonis for 30 seconds on HIGH.
  2. Assemble cheeses into the tortillas and add cooked pepperoni.
  3. Microwave on HIGH for about 1 minute.
  4. Add additional pepperoni on top and sprinkle more cheese on top.
  5. Microwave another 30-45 seconds or until cheese has melted.
  6. Serve and enjoy.

Upgraded Microwave Ramen

  • 1 pkg ramen noodles
  • 1 cup fresh spinach
  • 3 medium button mushrooms
  • 2 whole green onions
  • 1 large egg (optional)
  • 1 teaspoon chili garlic paste (optional)
  1. In a bowl, bring 2 cups of water to a boil by microwaving on high for 3-4 minutes.
  2. While you are waiting for the water to boil, wash and slice your veggies.
  3. Once the water is boiling, add the dry noodles and cook according to the package directions (boil about 5 minutes in HIGH).
  4. Add the seasoning packet (or half a packet if you prefer less sodium) and stir until dissolved.
  5. Mix your fresh veggies into the noodles and microwave another minute.
  6. Crack the egg into into the soup and microwave for 45 seconds on HIGH.
  7. Let the soup sit for a minute to cool down, serve with a dollop of chili garlic paste on the side and enjoy.

This Memorial Day weekend we honor and remember our fallen soldiers. We celebrate those who served and thank our brave men and women for their service. We observe this holiday, Sunday May 28th, National Hamburger Day, with friends and family, by enjoying this outdoor burger recipe.

Celebrate this Sunday May 28th, National Hamburger Day with Family and Friends Over the Grill for Fresh and Unique Lamb Burgers!

Goat-Cheese Stuffed Lamb-Burgers

Hamburger and Filling:

1 tsp olive oil
12 cup onion, diced
2 lbs ground lamb
1 egg
1 cup bread crumbs
1 clove garlic, minced
4 12 tsp salt
1 tbsp black pepper, ground
4 oz soft goat cheese
1 tbsp extra-virgin olive oil
1 tbsp fresh basil leaves, chopped
1 tbsp fresh oregano, chopped

Place on buns of choice. Top with romaine lettuce, onion, goat cheese, mushroom or grilled peppers.


  1. Heat 1 teaspoon of olive oil in a small skillet over medium heat. Cook and stir the onions in the oil until soft and translucent, about 5 minutes.
  2. Gently knead together the softened onions, lamb, egg, bread crumbs, garlic, salt, and pepper. Divide the mixture into 6 parts and roll into balls, then cover and refrigerate until ready to use.
  3. Mix together the goat cheese, extra-virgin olive oil, basil, and oregano until well combined; cover and chill for 5 minutes.
  4. Preheat an outdoor grill for medium-high heat.
  5. Working with one portion of meat at a time, make an indentation in the center of the ball with your thumb. Fill the indentation with a heaping tablespoon of the goat cheese mixture. Gently pull and form the meat patty around the cheese filling, making a burger-shaped patty. Repeat with each ball of the lamb mixture.
  6. Grill the patties on the preheated grill until no longer pink in the center and well done, about 8 minutes per side.
  7. Place on buns of choice.
  8. Top with condiments and serve immediately.
  9. Enjoy!

Celebrate Pi(e) Day with a Delicious Blueberry Pie Recipe!

March 14th (3.14) celebrates Pi Day as well as Pie day! This is a holiday for everyone to enjoy, from mathematicians to bakers and everyone in between. Here is a delicious homemade a pie recipe brought to you by Warehouse Discount Center.

Simple Blueberry Pie Recipe

Simple Blueberry Pie Recipe

Pie dough for top and bottom 9-inch pie

2/3 cup to 3/4 cup granulated sugar according to taste

1/4 cup cornstarch

2 teaspoons freshly grated lime zest

1/8 teaspoon ground cinnamon

1/8 teaspoon ground ginger

1/8 teaspoon kosher salt

2 pounds fresh blueberries (about 6 cups)

1 tablespoon butter, cut into small squares

1 egg yolk

1 tablespoon buttermilk

Gram cracker crumble for garnish

Pie Filling:

Stir sugar, cornstarch, lemon peel, allspice, cinnamon and salt in a large bowl. Add blueberries and gently toss to combine. Transfer blueberry filling to prepared/store bought pie crust. Refrigerate while preheating oven.


Heat oven to 400 degrees F. Position an oven rack in the lower third of the oven then place a baking sheet on rack.

Sprinkle gram cracker crumble on top of the pie. Bake pie on hot baking sheet for 20 minutes, reduce heat to 350 degrees F then continue to bake for 35 to 45 minutes, or until the crust is golden and juices in the filling bubble. If the crust begins to brown too much, cover with aluminum foil and continue to bake until done.

Cool 2 to 3 hours before cutting to allow filling to set. Serve with ice cream or whipped cream!

-If you cannot find fresh blueberries, you can substitute 6 cups frozen blueberries that have been thawed and drained.

-If you would rather a lattice dough top, or solid top with slits prepare and roll out enough dough and transfer on top right before baking.

Spaghetti Squash Recipe

Spaghetti squash can be more than just a substitute for pasta! This recipe makes a meatless-main dish perfect for any dinner, especially when paired with a salad. When this dish is bubbling away in the oven, you know it’s going to be a good night.

1 spaghetti squash, about 3 pounds

1 tablespoon olive oil

1 medium onion, finely chopped

2 garlic cloves, minced


Freshly ground pepper

3 large eggs

1/2 cup milk

2 tablespoons fresh basil, chopped (1/4 cup basil leaves)

1 cup grated Gruyere cheese

1/2 cup freshly grated Parmesan cheese


Cook the squash:

Place squash cut-sides-down in a microwave-safe baking dish. Fill the dish with about 1 inch of water.

Microwave on high for about 12 minutes, or until you can easily pierce the squash with a fork. Cooking time depends on the size of the squash and individual microwaves, so if you have a smaller squash and a microwave that cooks fast, check a little earlier. And if you are cooking a larger squash and have a lower-power microwave, it may take a little longer.

Allow squash to cool for 10 minutes, then scoop out the flesh with a fork to separate the spaghetti-like strands and then chop coarsely. Measure out 4 cups squash. (You can save any extra squash for another dish or freeze for later.)

Prepare the casserole:

Preheat the oven to 375 degrees F.

Lightly oil a 2-quart baking dish and set aside.

Heat the olive oil, over medium heat, in a large skillet. Add the onion and cook until tender, about five minutes. Add the garlic and a generous pinch of salt. Cook while stirring for another 30 seconds to a minute until fragrant. Add the squash. Cook, stirring often, for five minutes. Season to taste with salt and pepper, and remove from the heat.

In a large bowl, beat the eggs with the milk, salt, and pepper. Stir in the squash mixture, basil and the Gruyere cheese. Pour into the baking dish. Sprinkle the grated Parmesan cheese over the top.

Bake 40 to 45 minutes until the casserole top is browned and sizzling. Remove from oven, and cool for 10 to 15 minutes before serving. Casserole can be served hot, warm or at room temperature.
