March 14th (3.14) celebrates Pi Day as well as Pie day! This is a holiday for everyone to enjoy, from mathematicians to bakers and everyone in between. Here is a delicious homemade a pie recipe brought to you by Warehouse Discount Center.

Pie dough for top and bottom 9-inch pie

2/3 cup to 3/4 cup granulated sugar according to taste

1/4 cup cornstarch

2 teaspoons freshly grated lime zest

1/8 teaspoon ground cinnamon

1/8 teaspoon ground ginger

1/8 teaspoon kosher salt

2 pounds fresh blueberries (about 6 cups)

1 tablespoon butter, cut into small squares

1 egg yolk

1 tablespoon buttermilk

Gram cracker crumble for garnish

Pie Filling:

Stir sugar, cornstarch, lemon peel, allspice, cinnamon and salt in a large bowl. Add blueberries and gently toss to combine. Transfer blueberry filling to prepared/store bought pie crust. Refrigerate while preheating oven.


Heat oven to 400 degrees F. Position an oven rack in the lower third of the oven then place a baking sheet on rack.

Sprinkle gram cracker crumble on top of the pie. Bake pie on hot baking sheet for 20 minutes, reduce heat to 350 degrees F then continue to bake for 35 to 45 minutes, or until the crust is golden and juices in the filling bubble. If the crust begins to brown too much, cover with aluminum foil and continue to bake until done.

Cool 2 to 3 hours before cutting to allow filling to set. Serve with ice cream or whipped cream!

-If you cannot find fresh blueberries, you can substitute 6 cups frozen blueberries that have been thawed and drained.

-If you would rather a lattice dough top, or solid top with slits prepare and roll out enough dough and transfer on top right before baking.

Spaghetti squash can be more than just a substitute for pasta! This recipe makes a meatless-main dish perfect for any dinner, especially when paired with a salad. When this dish is bubbling away in the oven, you know it’s going to be a good night.

1 spaghetti squash, about 3 pounds

1 tablespoon olive oil

1 medium onion, finely chopped

2 garlic cloves, minced


Freshly ground pepper

3 large eggs

1/2 cup milk

2 tablespoons fresh basil, chopped (1/4 cup basil leaves)

1 cup grated Gruyere cheese

1/2 cup freshly grated Parmesan cheese


Cook the squash:

Place squash cut-sides-down in a microwave-safe baking dish. Fill the dish with about 1 inch of water.

Microwave on high for about 12 minutes, or until you can easily pierce the squash with a fork. Cooking time depends on the size of the squash and individual microwaves, so if you have a smaller squash and a microwave that cooks fast, check a little earlier. And if you are cooking a larger squash and have a lower-power microwave, it may take a little longer.

Allow squash to cool for 10 minutes, then scoop out the flesh with a fork to separate the spaghetti-like strands and then chop coarsely. Measure out 4 cups squash. (You can save any extra squash for another dish or freeze for later.)

Prepare the casserole:

Preheat the oven to 375 degrees F.

Lightly oil a 2-quart baking dish and set aside.

Heat the olive oil, over medium heat, in a large skillet. Add the onion and cook until tender, about five minutes. Add the garlic and a generous pinch of salt. Cook while stirring for another 30 seconds to a minute until fragrant. Add the squash. Cook, stirring often, for five minutes. Season to taste with salt and pepper, and remove from the heat.

In a large bowl, beat the eggs with the milk, salt, and pepper. Stir in the squash mixture, basil and the Gruyere cheese. Pour into the baking dish. Sprinkle the grated Parmesan cheese over the top.

Bake 40 to 45 minutes until the casserole top is browned and sizzling. Remove from oven, and cool for 10 to 15 minutes before serving. Casserole can be served hot, warm or at room temperature.
